First up…loaded fries with halloumi, roasted red peppers, pickled red onions, crispy onions & pesto mayo 🔥

I made this at home and put it in front of my toughest critic - the wife. Verdict? Chef’s kiss. ✅ 

(Feta is also joining the party here - we just forgot it for the photo. She’ll be there, don’t worry.)

Well… that escalated quickly.

Our premium BBQ cuts (the ones we slow smoked for 15 hours) absolutely flew out the hatch so we’ve had to make some updates to the menu for the rest of the festival.

Honestly – we’re blown away. Thank you to everyone who came early and made them such a hit 🙌

The good news? 
We’ve still got plenty of smoky, juicy BBQ goodness ready to roll. 

So if you’re heading down over the next few days, come hungry – we’ve still got the good stuff smoking and the grill hot.

We’ve got a couple new hitters joining the lineup. First up, the Jacob’s Ladder smoked beef rib — big, bold, and cooked low ‘n slow until it’s falling apart in all the right ways.

If you’re keeping it classic, the Brisket Bun is back doing what it does best, now stacked with a crunchy apple & fennel slaw that cuts through that smoky goodness just right.

And yeah… we might’ve got carried away and made a dessert too. Our filthy take on a s’more — melted, messy, and basically a sweet little heart-attack in the best possible way. Worth it. Every bite.
